Let’s create the menu.

Chef David Bouley: French food had a reputation for being too rich. So people would go in, they would tell the chef how to cook: Don’t do the sauce, don’t do this. I had just come from France, trained in nouveau cuisine, so we went in that direction.

Chef David Bouley: When I opened Montrachet in 1985, that was a turning point for French restaurants, and then Bouley, later when we opened in ’87, we weren’t using any dairy. I didn’t like the dairy here because it ‘s too processed.  We were about 70 percent organic. So I was just working with hippy farmers, they were bringing me grown things in ground, was really healthy, and customers were responding to it.

Let’s curate the experience.

Chef David Bouley: 13 years now, Test Kitchen’s been functioning.  The initial concept was to study food with more focus from the power of the food, the nutrient density, the flavor of course, health, and then use certain techniques to bring out those qualities. 

Chef David Bouley: And then we brought people from all over the world that were educating us. So they would come work with us.  And then we pass that into our menus and contribute that to our customers.

It’s a game for life.

Brad Gilbert, Former Coach of Andre Agassi, ESPN Commentator: First of all, enjoy the game. It's a game for life and a three-letter word that's most important: fun. Live to see another shot. Don't try to be too big. Think about hitting middle if you can and make balls, try to make more balls, try to frustrate your opponent a little bit, that's what I try to do.

Demo rackets.

Brad Gilbert: I have a tennis shop, Brad Gilbert Tennis Nation. And wherever you play tennis, I say everybody has a different feeling. Demo rackets. Don't just buy one off the rack because you see it and you think it's a great color. Go out and hit with them, test the different strings, test the different rackets. Most importantly it's that feeling in your hand and strings are really important, get soft strings so it doesn't hurt your arm.

Brad Gilbert: The older we get the better we used to be, but no matter what court you're playing on, your technique should be the same, you don't really try to change the way you swing for what court you're playing on. You sometimes want to tell yourself, "gosh darnit! Move my feet a little more. I wish I had an automatic button to make them move," yeah, but the brain and feet got to be in sync. Happy Feet, happy brain.
